When it’s raining outside & my to-do list has become nothing short of epic, I like to ignore the world and spend an afternoon skiving off and testing a recipe I’ve earmarked from one of my favourite food blogs. This one is inspired by the brilliant “The First Mess”, although I have left out the Chai seeds because the little buggers get stuck in your teeth and swapped vanilla for Cinnamon because, well, I just like it more.
These bars have the taste of a salted caramel Flapjack, but without being loaded with sugar and fat. You’re welcome …
DRY INGREDIENTS:
3 cups of oats
1 tsp salt
1 cup Sunflower Seeds
1/3 cup Sesame Seeds
1/3 cup Cacao Nibs
WET INGREDIENTS
2/3 cup Tahini
2/3 cup Rice Syrup or Honey
1/3 cup Maple Syrup
1 Tbs Olive Oil
1 tsp Cinnamon
Several squares of good dark Chocolate to drizzle
METHOD
1.Oil an 8×12 inch tray, and set oven to Gas 6
2.Combine the dry ingredients in a bowl & combine to mix together evenly. Put aside
3. In a saucepan on a low heat combine Tahini, syrups, oil & cinnamon. Heat until the mixture is more fluid but don’t bring to the boil
4.Pour the tahini & syrup mixture over the oats & seeds and mix well. It gets quite solid quite quickly as the Tahini cools, so don’t wander off mid stir …
5. Tip into the prepared tray & press down.
6.Bake until the sides are golden – about 25mins. Cool in the pan completely before slicing & drizzling with dark chocolate
7. Put in an airtight tin, and try not to eat them all in one sitting….
